Ingredients

Scale
  • 8 ounces goat cheese, softened
  • 4 ounces cream cheese, softened
  • 2 tablespoons extra-virgin olive oil, plus more for drizzling
  • 1 clove garlic, finely minced
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper, freshly cracked
  • Pinch of salt
  • 1 tablespoon balsamic glaze
  • 8 ounces prosciutto, thinly sliced
  • 6 ounces salami, sliced (Genoa or soppressata)
  • 6 ounces sharp white cheddar cheese, cubed
  • 4 ounces smoked gouda, sliced
  • 1 cup mixed olives (kalamata and castelvetrano)
  • 1 cup cherry or grape tomatoes, halved if large
  • 1/2 cup roasted red peppers, sliced
  • 1/2 cup cornichons or pickled okra
  • 1/4 cup pumpkin seeds, toasted
  • 1 small bunch fresh rosemary or thyme sprigs
  • Assorted crackers and bread (water crackers, rosemary crostini, baguette slices)
  • 1 tablespoon black sesame seeds

Instructions

  1. Make the goat cheese dip: In a medium mixing bowl, combine the softened goat cheese, cream cheese, olive oil, minced garlic, lemon juice, dried thyme, black pepper, and a pinch of salt. Beat with a hand mixer on medium speed until smooth and creamy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula halfway through. If too thick, add another tablespoon of olive oil. Transfer to a small serving bowl, smooth the top, and drizzle with extra olive oil and balsamic glaze. Set as…
  2. Prepare your board: Place your serving board on a clean, flat surface. Arrange small ramekins or bowls on the board first. Place the bowl of goat cheese dip slightly off-center to serve as the ‘body’ of the spiderweb.
  3. Create the spiderweb base: Working outward from the dip bowl, arrange ingredients in concentric circles. Fold salami slices into quarters and place them around the dip bowl, overlapping slightly. Drape prosciutto in waves next to the salami.
  4. Add the cheese and produce: Arrange cubed cheddar and sliced gouda in a ring around the meats. Place olives, cherry tomatoes, roasted red peppers, and cornichons in small clusters around the board, leaving gaps for crackers. Scatter pumpkin seeds in small pinches.
  5. Build the web lines: Using black sesame seeds, create thin lines radiating from the center dip bowl outward to the edges of the board. Start at the dip and gently sprinkle a line of seeds, using your finger or a small knife to guide them. Repeat every inch or so around the entire board, creating 8 to 12 spokes. Then connect the spokes with curved lines to form a spiderweb pattern.
  6. Finish with garnish: Tuck sprigs of fresh rosemary or thyme around the board. Place extra crackers in small stacks around the edges. Roll leftover prosciutto into rosettes for height. Drizzle more balsamic glaze over the goat cheese dip right before serving.
  7. Serve immediately or chill: If prepping ahead, cover the board loosely with plastic wrap and refrigerate for up to 2 hours. Add fresh herbs and last-minute garnishes just before serving. Let the dip sit at room temperature for 15 minutes before serving.

Notes

Room temperature ingredients are essential for a smooth dip. Let goat cheese and cream cheese sit out for at least 30 minutes before mixing. The spiderweb pattern doesn’t need to be perfect; imperfections can be covered with crackers or herbs. The dip can be made up to 3 days in advance and stored in the refrigerator. For best results, serve the board at room temperature.
