Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie chicken works perfectly)
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup buffalo wing sauce (preferably Frank’s RedHot)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream (for spider web design)
  • 2 tablespoons cream cheese, softened (for spider web design)

Instructions

  1. Prepare your chicken: If using rotisserie chicken, remove skin and bones, then shred with two forks. You should have about 2 cups of shredded chicken.
  2. Soften the cream cheese: Take 8 ounces of cream cheese out of the fridge at least 30 minutes before starting to bring to room temperature.
  3. Combine the base ingredients: In your slow cooker, add shredded chicken, softened cream cheese, buffalo wing sauce, ranch dressing, and half of the shredded cheddar and Monterey Jack cheese. Stir until cream cheese is mostly incorporated.
  4. Cook on low: Cover and cook on low for 2 hours. After 1 hour, stir to help everything melt evenly. The dip should be hot, bubbly, and smooth.
  5. Add the remaining cheese: Stir in the remaining shredded cheese. Reserve about 1/4 cup for the top if desired. Let melt for 5 minutes.
  6. Make the spider web mixture: In a small bowl, combine 1/4 cup sour cream and 2 tablespoons softened cream cheese. Stir until smooth. Transfer to a squeeze bottle or piping bag.
  7. Create the spider web design: Starting from the center of the dip, pipe a small circle of the sour cream mixture. Pipe concentric circles moving outward, spacing about an inch apart. Use a toothpick to gently drag from the center outward through all circles, repeating every inch around the dip.
  8. Garnish and serve: Sprinkle remaining green onions over the top, focusing on edges. Add extra buffalo sauce for color contrast. Serve immediately from the slow cooker set to warm.

Notes

For best results, shred your own cheese from a block to avoid anti-caking agents. Let the dip cool for 5 minutes before piping the spider web design to prevent it from sinking. The dip can be made ahead and reheated; add the spider web design just before serving.
