Ingredients

Scale
  • 1 cup all-purpose flour (spooned and leveled)
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk (room temperature)
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract (pure)
  • 1 cup light brown sugar, packed (for pecan topping)
  • 1 cup chopped pecans (toasted)
  • 1/2 cup unsalted butter, melted (for pecan topping)
  • 1/2 cup heavy cream (for pecan topping)
  • 1 teaspoon vanilla extract (for pecan topping)
  • 1/2 cup unsalted butter (for caramel sauce)
  • 1 cup light brown sugar, packed (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)
  • 1 teaspoon flaky sea salt (for caramel sauce)
  • 1 teaspoon vanilla extract (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Make the cobbler base: In a large bowl, whisk together 1 cup flour, 1 cup granulated sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt. Make a well in the center and pour in 1 cup milk, 1/2 cup melted butter, and 1 teaspoon vanilla. Stir until just combined (a few lumps are fine). Pour into the prepared dish and spread evenly.
  3. Prepare the pecan pie topping: In a separate bowl, mix 1 cup packed brown sugar, 1 cup chopped toasted pecans, 1/2 cup melted butter, 1/2 cup heavy cream, and 1 teaspoon vanilla. Stir until well combined.
  4. Layer the topping: Gently spoon the pecan mixture over the cobbler base. Do not stir it in.
  5. Bake for 40-45 minutes, until the top is golden brown and the edges are bubbling. The center should be set but slightly jiggly. If browning too quickly, tent with foil for the last 10 minutes.
  6. Make the salted caramel sauce while the cobbler bakes: In a medium saucepan over medium heat, melt 1/2 cup butter. Add 1 cup packed brown sugar and stir constantly for 2-3 minutes until smooth and bubbling. Slowly pour in 1/2 cup heavy cream while stirring (it will bubble up). Continue stirring for 2 minutes until slightly thickened. Remove from heat and stir in 1 teaspoon vanilla and 1 teaspoon flaky sea salt. Let cool slightly.
  7. Finish and serve: Let the cobbler rest for 10-15 minutes after baking. Drizzle the salted caramel sauce generously over the top, sprinkle with extra toasted pecans and a pinch of flaky salt. Serve warm.

Notes

Toast pecans first for best flavor. Don’t overmix the batter. Let cobbler rest before serving to set properly. Double the caramel sauce for extra. For dairy-free, use plant-based butter and coconut cream. For gluten-free, use a 1:1 gluten-free baking blend.
