Instructions

  1. Prep the watermelon: Cut the watermelon in half, then into thick slices. Remove the rind and cube the flesh into 1-inch pieces (about 4 cups). Place in a large bowl. (Optional: line bowl with paper towels to absorb excess juice if serving immediately.)
  2. Prepare the feta: Pat the feta block dry with a paper towel. Crumble into uneven pieces using your fingers or a fork. Add to the bowl with the watermelon. Do not stir yet.
