Best Oktoberfest Sheet Pan Sausage & Peppers Recipe

A one-pan wonder featuring bratwurst, colorful bell peppers, and onions roasted with a secret spice blend and dark beer. Perfect for feeding a crowd with minimal cleanup.

  • 2 pounds bratwurst or smoked German sausage (about 8 links)
  • 1 bottle dark beer (12 ounces)
  • 3 large bell peppers (mix of red, yellow, and orange)
  • 2 large red onions
  • 4 cloves garlic, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • Whole grain mustard (for serving, optional)
  • Fresh parsley, chopped (for serving, optional)
  • Pretzel rolls or crusty bread (for serving, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place one rack in the middle position.
  2. Line your sheet pan with parchment paper or foil.
  3. Cut the bell peppers into 1/2-inch strips. Cut the onions in half, then slice into 1/2-inch half-moons. Slice the garlic thinly.
  4. In a small bowl, combine the smoked paprika, caraway seeds, dried thyme, garlic powder, onion powder, black pepper, and salt.
  5. Place the sliced peppers, onions, and garlic in a large mixing bowl. Drizzle with 2 tablespoons olive oil and sprinkle with half the spice blend. Toss well.
  6. Spread the vegetables in a single, even layer on the sheet pan.
  7. Prick each sausage 3-4 times with a fork. Place the sausages on top of the vegetables, spacing them evenly.
  8. Pour the beer around the sausages (not directly over them).
  9. Sprinkle the remaining spice blend over the sausages.
  10. Roast for 25 minutes.
  11. Remove the pan and turn the sausages. Stir the vegetables gently. Return to the oven.
  12. Roast for another 15-20 minutes, until sausages are browned and peppers have charred edges. Internal temperature should reach 160°F.
  13. Optional: Broil for 2-3 minutes for extra color.
  14. Let rest for 5 minutes. Sprinkle with fresh parsley if using.
  15. Serve directly from the sheet pan or transfer to a platter.

Notes

Don’t skip pricking the sausages to prevent bursting. For best flavor, toast caraway seeds in a dry skillet before using. If vegetables brown too fast, cover loosely with foil.
