Best Mexican Champurrado – Easy 15-Minute Chocolate Masa Drink

champurrado recipe - featured image

A thick, cozy, chocolatey Mexican drink made with masa harina and Mexican chocolate. Perfect for gatherings, this quick and easy recipe comes together in under 15 minutes and is always a crowd-pleaser.

Ingredients

Scale
  • 4 cups whole milk
  • 1/2 cup masa harina
  • 1 disk (about 3 oz) Mexican chocolate, chopped
  • 1/4 cup piloncillo, grated (or dark brown sugar)
  • 1 cinnamon stick
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the milk and cinnamon stick: In a medium saucepan, pour in the 4 cups of whole milk. Drop in the cinnamon stick. Set the heat to medium and let it warm up for about 3-4 minutes until steaming, not boiling.
  2. Mix the masa slurry: In a small bowl, whisk together 1/2 cup masa harina and about 1/2 cup cold water until completely smooth.
  3. Incorporate the masa: Once the milk is steaming, remove the cinnamon stick. Slowly pour the masa slurry into the milk while whisking constantly. Keep whisking for about 2 minutes until the mixture starts to thicken and is smooth.
  4. Add the chocolate and sweetener: Add the chopped Mexican chocolate, grated piloncillo (or brown sugar), and salt. Continue whisking gently until the chocolate is completely melted and the sugar has dissolved, about 3-4 minutes.
  5. Finish with vanilla: Remove from heat. Stir in the vanilla extract. Whisk until combined. The champurrado should be thick enough to coat the back of a spoon but still pourable. Adjust consistency with a splash of milk if needed.
  6. Serve immediately: Pour into mugs or a thermos. Keep warm in a slow cooker on the ‘warm’ setting if serving at a party. Garnish with cinnamon or cayenne if desired.

Notes

Always make a slurry with masa harina and cold water before adding to hot milk to prevent lumps. Keep heat on medium to avoid scorching the milk. The texture will thicken as it cools; stir before serving. For a crowd, double or triple the recipe and use a larger pot. Leftovers can be stored in the fridge for up to 3 days and reheated on the stove over low heat.
