Ingredients

Scale
  • 1 ½ cups all-purpose flour (190g)
  • ½ cup powdered sugar (60g)
  • ¾ cup unsalted butter (170g), cold and cubed
  • ¼ teaspoon salt
  • ¾ cup pure maple syrup (240ml)
  • ½ cup brown sugar (100g), packed
  • ¼ cup bourbon (60ml)
  • 3 large eggs, room temperature
  • ¼ cup unsalted butter (57g), melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups pecan halves (200g)
  • Flaky sea salt (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving 2 inches of overhang on the long sides. Lightly grease the parchment.
  2. In a large bowl, whisk together flour, powdered sugar, and salt. Cut in cold cubed butter using a pastry blender or fingertips until mixture resembles coarse meal with some pea-sized butter pieces. Press firmly and evenly into the prepared pan. Prick the crust all over with a fork.
  3. Bake the crust for 15 minutes, until just barely golden around the edges. Let cool on a wire rack for 10 minutes.
  4. While the crust cools, whisk together maple syrup, brown sugar, and bourbon in a medium bowl until sugar dissolves. Add eggs one at a time, whisking well after each. Stir in melted butter, vanilla extract, and salt. Fold in pecan halves gently.
  5. Pour the filling over the pre-baked crust, spreading pecans evenly. Bake at 350°F (175°C) for 35 to 40 minutes, until edges are set and center jiggles slightly.
  6. Cool completely in the pan on a wire rack for at least 2 hours. For clean slices, refrigerate for another hour before cutting. Use parchment handles to lift the block onto a cutting board, then slice into squares with a sharp knife. Sprinkle with flaky sea salt if desired.

Notes

For clean slices, refrigerate bars for at least 1 hour before cutting. Use a sharp knife and wipe clean between cuts. Bars taste even better the next day. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Freeze individual squares wrapped in plastic wrap for up to 3 months.
