  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) refried beans (optional)
  • 1 large bag (1316 oz) restaurant-style tortilla chips (e.g., Tostitos Scoops)
  • 2 cups shredded sharp cheddar cheese
  • 2 cups shredded Monterey Jack cheese (or Pepper Jack)
  • 1/2 cup pickled jalapeños, drained
  • 1 cup cherry tomatoes, diced
  • 1 large avocado, diced
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup green onions, sliced
  • 1 lime, cut into wedges
  • 1/2 cup canned corn, drained (optional)
  • 1/4 cup sliced black olives (optional)
  • Hot sauce (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with aluminum foil.
  2. In a large skillet over medium-high heat, cook the ground beef, breaking it up, until browned (6-8 minutes). Drain excess fat.
  3. Reduce heat to low. Add taco seasoning and 1/2 cup water. Stir and simmer for 2-3 minutes until thickened. If using refried beans, stir them in now.
  4. Spread half of the tortilla chips in an even layer on the prepared baking sheet.
  5. Sprinkle half of the meat mixture, half of the black beans, half of the cheddar, half of the Monterey Jack, and half of the pickled jalapeños over the chips.
  6. Arrange the remaining chips on top, staggering them in the gaps.
  7. Repeat the layering with the remaining meat, black beans, cheeses, and pickled jalapeños.
  8. Bake for 10-12 minutes, until cheese is melted and bubbly and chip edges are lightly golden.
  9. Remove from oven. Immediately top with diced tomatoes, diced avocado, and sliced green onions.
  10. Drizzle with sour cream, scatter cilantro, and add any other cold toppings. Squeeze lime wedges over the top. Serve immediately.

For best crunch, serve immediately after baking. Avoid soggy chips by layering dry ingredients first and adding wet toppings (salsa, sour cream, guacamole) at the end. Shred your own cheese for smoother melting. Use sturdy restaurant-style chips.
