These apple dumplings feature tender baked apples wrapped in flaky puff pastry, drenched in a warm cinnamon sauce. A showstopper dessert that’s surprisingly easy to make, perfect for impressing guests or turning a simple evening into something special.

Ingredients

Scale
  • 6 medium baking apples (Honeycrisp or Granny Smith)
  • 2 sheets puff pastry, thawed
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg, beaten
  • 1 cup granulated sugar
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C). Position rack in center.
  2. Peel apples and remove cores, leaving bottoms intact.
  3. In a small bowl, combine 1/4 cup sugar, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Spoon mixture into hollowed apples.
  4. On a lightly floured surface, roll out puff pastry sheets slightly. Cut each sheet into three rectangles.
  5. Place an apple in center of each rectangle. Bring corners up and over apple, pressing seams to seal. Place seam-side down in greased 9×13-inch baking dish.
  6. Brush tops and sides with beaten egg. Sprinkle with extra cinnamon sugar if desired.
  7. Bake for 15 minutes (par-bake).
  8. Meanwhile, in a saucepan over medium heat, combine 1 cup sugar, 1 cup water, 1/2 cup butter, and 1 tablespoon cinnamon. Whisk until butter melts and sugar dissolves, about 3-4 minutes. Remove from heat; stir in vanilla and salt.
  9. After par-bake, remove dish from oven. Pour hot cinnamon sauce around dumplings (not over tops). Return to oven and bake 25-30 minutes until pastry is deep golden and apples are tender.
  10. Let cool in dish for at least 10 minutes before serving.

Notes

Don’t skip the par-bake step—it keeps the pastry flaky. Keep puff pastry cold for best results. Choose firm apples like Honeycrisp or Granny Smith. Seal pastry seams well to prevent filling from leaking. Let dumplings rest before serving to allow sauce to thicken.
