  • 1/2 cup green grapes
  • 1/4 cup pumpkin seeds
  • Fresh rosemary or thyme sprigs for garnish (optional)

Instructions

  1. Make the candy corn cheese base: In a medium mixing bowl, combine the softened cream cheese, shredded cheddar, sour cream, garlic powder, and a pinch of salt and pepper. Mix until smooth and well combined. Taste and adjust seasoning.
  2. Divide and color the cheese: Split the mixture into three equal parts in separate bowls. Leave one bowl plain (white bottom layer). To the second bowl, add 1/4 teaspoon paprika and mix until evenly colored (orange middle layer). To the third bowl, add the remaining 1/4 teaspoon paprika plus a tiny pinch of turmeric or a drop of yellow food coloring (yellow top layer).
  3. Shape the cheese into a candy corn wedge: Lay a large piece of plastic wrap on your counter. Spoon the white cheese mixture onto the plastic and shape it into a rectangle about 4 inches wide and 6 inches long, about 1 inch thick. Place in the freezer for 5 minutes to firm up.
  4. Layer the orange and yellow: Remove the white layer from the freezer. Spread the orange cheese mixture evenly on top of the white layer, pressing gently. Then spread the yellow mixture on top of the orange. Wrap the plastic wrap tightly around the block and shape it into a wedge—wider at the bottom, narrower at the top. Chill in the refrigerator for at least 30 minutes, or up to 24 hours.
  5. Prepare the board: While the cheese chills, arrange your board. Place small ramekins or bowls for loose items like dried cranberries, pumpkin seeds, or olives. Leave the center open for the cheese.
  6. Slice and arrange the cheese: Once the cheese log is firm, unwrap it and place it in the center of your board. Use a sharp knife to slice it into 1/2-inch thick pieces, revealing the candy corn layers. Arrange the slices in a fan or overlapping pattern.
  7. Fill in the gaps: Place the crackers around the cheese. Add clusters of grapes, dried apricots, dark chocolate chunks, and almonds. Sprinkle pumpkin seeds in any empty spaces. Tuck fresh rosemary or thyme sprigs between items for color.
  8. Serve immediately or chill: This board is best served within an hour of assembly. If prepping ahead, keep the cheese wrapped in the fridge and assemble the board just before guests arrive.

Notes

The cheese needs at least 30 minutes to chill, but making it the night before allows flavors to meld. Use room temperature cream cheese for smooth mixing. Freshly shredded cheddar works better than pre-shredded. For a vegan version, use vegan cream cheese and cheddar shreds plus nutritional yeast. For a gluten-free board, use gluten-free crackers or cucumber rounds.
