  • 4 oz (113g) cream cheese, softened (for frosting)
  • 1/4 cup (56g) unsalted butter, softened (for frosting)
  • 1 1/2 cups (180g) powdered sugar
  • 1/2 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, leaving overhang on long sides. Grease lightly.
  2. Make the gingerbread crust: In a large bowl, whisk together flour, brown sugar, baking soda, ginger, cinnamon, cloves, and salt. Cut in cold butter using a pastry cutter or fingertips until mixture resembles coarse crumbs.
  3. In a small bowl, whisk together molasses and egg. Pour into flour mixture and stir with a rubber spatula until a shaggy dough forms.

  11. Make frosting: In a medium bowl, beat softened cream cheese and butter until smooth. Gradually add powdered sugar, beating on low speed. Add vanilla and salt, then beat on medium-high for 2 minutes until light and airy.
  12. Spread frosting over chilled cheesecake layer. Use parchment overhang to lift out of pan. Cut into bars using a hot knife for clean slices.
