This warm, gooey, slightly spicy dip tastes exactly like a jalapeno popper but is way easier to share. Perfect for game day, potlucks, and casual get-togethers.

Ingredients

Scale
  • 16 oz cream cheese, softened to room temperature
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 packet (1 oz) ranch seasoning mix
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup pickled jalapeño slices, drained and roughly chopped
  • 2 fresh jalapeños, seeded and finely diced
  • 8 slices bacon, cooked until crispy and crumbled
  • 1/2 cup chopped green onions
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • Extra bacon crumbles and green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Cook bacon until crispy, about 8-10 minutes. Let cool, then crumble. Set aside 2 tablespoons for topping.
  2. In a large mixing bowl, combine softened cream cheese, sour cream, mayonnaise, and ranch seasoning. Beat with an electric mixer on medium speed until smooth and well combined, about 2 minutes.
  3. Fold in 1 1/2 cups of the shredded cheddar cheese, all of the Monterey Jack cheese, and the Parmesan cheese. Reserve the remaining 1/2 cup of cheddar for the top.
  4. Add the chopped pickled jalapeños, fresh jalapeños, most of the crumbled bacon (save some for garnish), and the green onions. Fold gently until evenly distributed.
  5. Transfer the mixture to a greased 9×13 inch baking dish. Spread evenly. Top with the reserved 1/2 cup of cheddar cheese.
  6. In a small bowl, combine panko breadcrumbs with melted butter. Stir until evenly coated. Sprinkle over the top of the dip.
  7. Bake for 20-25 minutes, or until hot and bubbly around the edges. The top should be golden brown. Optionally, broil for 1-2 minutes for extra browning.
  8. Remove from oven and let rest for 5 minutes. Sprinkle reserved bacon crumbles and extra green onions on top. Serve warm with tortilla chips, crackers, or sliced baguette.

Notes

For best texture, ensure cream cheese is at room temperature. Grate your own cheese for smoother melting. To make ahead, prepare dip without breadcrumb topping, refrigerate up to 24 hours, then add topping and bake. For a slow cooker version, cook on low for 2-3 hours, then add topping before serving.
