  • 8 oz Brie wheel
  • 4 oz blue cheese (gorgonzola or stilton)
  • 6 oz sharp cheddar
  • 6 oz prosciutto, thinly sliced
  • 4 oz dry Italian salami, sliced into thin rounds
  • 4 oz soppressata, sliced (optional)
  • ½ cup fig jam (recommended: Dalmatia brand)
  • Honey for drizzling
  • ½ cup dried figs, halved lengthwise
  • 1 Honeycrisp or Fuji apple, thinly sliced and tossed with lemon juice
  • 1 cup red grapes, in small clusters
  • ½ cup toasted walnuts, lightly salted
  • ¼ cup pumpkin seeds, toasted with cinnamon (optional)
  • 1 small crusty baguette, sliced (toasted or fresh)
  • 8 oz assorted crackers (water crackers, whole wheat, rosemary crackers)
  • ½ cup cornichons
  • ½ cup mixed olives (green and kalamata)

Instructions

  1. Prep the cheeses (5 minutes): Take all cheeses out of the refrigerator 15 minutes before starting. Slice aged gouda and sharp cheddar into thin triangles or cubes. Leave brie whole but score the top in a crosshatch pattern. Crumble or slice blue cheese into small pieces.
  2. Toast the nuts (3 minutes): Heat a small skillet over medium heat. Add walnuts and pumpkin seeds. Toast for 2-3 minutes, shaking the pan occasionally, until fragrant. Remove from heat and let cool.
  3. Prep the fruit (3 minutes): Slice apple thinly and toss with a squeeze of lemon juice to prevent browning. Halve dried figs. Rinse grapes and pat completely dry.
  4. Arrange the cheeses (3 minutes): Place cheeses around the board, spacing them evenly. Put brie in a prominent spot. Angle cheese pieces so they look intentional.
  5. Add the meats (3 minutes): Fold prosciutto slices into loose ribbons or waves. Arrange salami and soppressata slices in a slightly overlapping pattern. Group meats near cheeses they pair best with.
  6. Add the spreads and bowls (2 minutes): Spoon fig jam into a small bowl and place near the center. Drizzle honey into another bowl. Place olives and cornichons in their own bowls. Position bowls to break up larger ingredients.
  7. Fill in with fruit and nuts (2 minutes): Scatter apple slices, dried figs, and grape clusters in empty spaces. Sprinkle toasted walnuts and pumpkin seeds around. Leave some board visible.
  8. Add the crackers and bread (2 minutes): Fan baguette slices along one edge. Arrange crackers in small clusters near each cheese.
  9. Final touches (1 minute): Step back and look at the board. Fill any obvious gaps with extra nuts or fruit. Drizzle honey over brie. Add fresh rosemary sprigs or edible flowers for garnish. Serve immediately.

Notes

Let cheeses sit at room temperature for 15-20 minutes before serving for best flavor. Toss apple slices with lemon juice to prevent browning. Arrange largest items first, then fill in with smaller items. Serve with small plates and napkins.
