These sophisticated champagne jello shots combine bubbly sparkling wine with tart pomegranate juice and fresh arils for a festive, elegant party treat that’s surprisingly easy to make.

Ingredients

Scale
  • 1 ½ cups Champagne or Sparkling Wine (chilled)
  • 1 cup 100% Pomegranate Juice
  • 3 tablespoons Granulated Sugar
  • 2 ½ teaspoons Unflavored Gelatin Powder
  • ½ cup Fresh Pomegranate Arils (seeds)

Instructions

  1. Bloom the Gelatin: Pour ½ cup of cold water into a small bowl. Sprinkle the 2 ½ teaspoons of unflavored gelatin powder evenly over the surface. Do not stir. Let it sit for 5 minutes until it becomes a firm, solid block.
  2. Heat the Juice and Sugar: While the gelatin blooms, pour the 1 cup of pomegranate juice and 3 tablespoons of sugar into a medium saucepan. Heat over medium heat, whisking occasionally, until the sugar is completely dissolved and the juice is hot but not boiling (steaming, not simmering), about 2-3 minutes.
  3. Combine the Gelatin and Juice: Remove the saucepan from the heat. Add the bloomed gelatin block to the hot pomegranate juice. Whisk gently but constantly until the gelatin is completely melted and the mixture is smooth and clear. If lumps remain, pour through a fine-mesh strainer into a liquid measuring cup.
  4. Add the Champagne: Let the juice-gelatin mixture cool for about 2 minutes. Slowly pour in the 1 ½ cups of chilled champagne while whisking gently. Whisk just until combined.
  5. Assemble the Shots: Place 24 (2-ounce) shot cups on a baking sheet. Drop 3-4 pomegranate arils into each cup. Carefully pour the liquid mixture into each cup, filling them almost to the top, leaving about ¼ inch of space for lids.
  6. Set in the Refrigerator: Put the lids on the cups and carefully transfer the baking sheet to the refrigerator. Let them set for at least 4 hours, but overnight is even better. They need to be fully firm to the touch.

Notes

Let the champagne sit open for about 5 minutes after pouring to let some of the aggressive bubbles settle. Pat pomegranate arils dry before adding to prevent watering down the gelatin. These taste even better on the second day as flavors meld. Store in the refrigerator for up to 5 days; do not freeze.
