Ingredients

Scale
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami (Genoa or soppressata), sliced into ribbons
  • 4 oz sharp cheddar cheese, cut into small cubes (about 1/2 inch)
  • 4 oz brie cheese, cut into small wedges
  • 1 cup red grapes, washed and dried
  • 1/2 cup dried apricots or figs, roughly chopped
  • 1/4 cup roasted, salted almonds
  • 1/4 cup pistachios, shelled
  • 4 small handfuls of crackers (about 8–10 per cup)
  • 2 tablespoons honey (optional, for drizzling)
  • Fresh rosemary sprigs for garnish

Instructions

  1. Prep Your Ingredients (5 minutes): Wash and dry grapes. Cut cheddar into small cubes (about 1/2 inch). Slice brie into small wedges. Cut salami into thin ribbons. Chop dried apricots or figs into small pieces. Set everything in small bowls.
  2. Layer the Base (2 minutes): Place a small handful of salami ribbons and a couple of prosciutto slices at the bottom of each cup. Do not pack them down too much.
  3. Add the Cheese (2 minutes): Add 3-4 cubes of cheddar and 2-3 wedges of brie to each cup. Distribute evenly.
  4. Add the Fruits and Nuts (3 minutes): Add a small handful of grapes (about 5-6 per cup), a sprinkle of chopped apricots, and a mix of almonds and pistachios to each cup.
  5. Add the Crackers and Garnish (2 minutes): Gently tuck 8-10 crackers into the sides of each cup. Drizzle a tiny bit of honey over the cheese and fruit (if using), and stick a sprig of fresh rosemary into the side.
  6. Serve Immediately or Chill (1 minute): Serve immediately at room temperature. If making ahead, do not add crackers or honey until just before serving.

Notes

For best texture, bring brie and cheddar to room temperature before assembling. Dry grapes thoroughly to prevent sogginess. Add crackers at the last minute to keep them crisp. These cups can be prepped a few hours ahead (without crackers and honey) and assembled just before serving.
