These Kid-Approved Buffalo Chicken Stuffed Sweet Potatoes are a quick and easy weeknight dinner that combines spicy, tangy buffalo chicken with sweet, roasted sweet potatoes. Perfect for family dinners, this recipe is simple, delicious, and ready in about 45 minutes.

Ingredients

Scale
  • 4 medium sweet potatoes
  • 2 cups cooked chicken breast, shredded
  • ½ cup buffalo sauce (e.g., Frank’s RedHot Original)
  • 2 tablespoons butter, melted
  • ½ cup shredded cheddar cheese
  • 34 green onions, sliced
  • ¼ cup Greek yogurt or sour cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes. Prick each sweet potato several times with a fork.
  3. Rub the potatoes with olive oil and a pinch of salt. Place them on a baking sheet.
  4. Bake for 35-45 minutes, or until tender when pierced with a fork.
  5. While the potatoes roast, prepare the chicken: season chicken breasts with salt and pepper, cook in a skillet over medium heat with a teaspoon of oil for 5-7 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then shred with two forks.
  6. In a medium bowl, combine the shredded chicken, buffalo sauce, and melted butter. Stir until evenly coated.
  7. When the potatoes are done, let them cool for 5 minutes. Slice each open lengthwise and fluff the insides with a fork.
  8. Spoon the buffalo chicken mixture into each potato. Top with shredded cheddar cheese.
  9. Return to the oven for 5 minutes to melt the cheese. Optionally, broil for 1-2 minutes for a bubbly top.
  10. Remove from oven and top with Greek yogurt or sour cream and sliced green onions. Serve immediately.

Notes

For a milder version, mix buffalo sauce with extra melted butter (1:1 ratio). For dairy-free, use plant-based butter and skip cheese or use dairy-free shreds. Sweet potatoes can be roasted a day ahead and reheated.
