A cozy, nutty brown butter and sage roasted turkey breast for two, perfect for a weeknight dinner or a romantic meal. This simple yet elegant recipe delivers crispy skin and juicy meat with minimal effort.

Ingredients

Scale
  • 1 bone-in, skin-on turkey breast (2 to 2.5 pounds)
  • 4 tablespoons unsalted butter
  • 10–12 fresh sage leaves
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 cup chicken broth, low-sodium
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Take the turkey breast out of the fridge 30 minutes before cooking. Pat it completely dry with paper towels. Season generously on all sides with salt, pepper, garlic powder, and onion powder.
  2. Preheat your oven to 375°F (190°C). While it’s heating, make the brown butter. Place the 4 tablespoons of butter in a small skillet over medium heat. Let it melt, then swirl the pan occasionally. When it smells nutty and you see little brown specks forming, remove it from the heat immediately (about 4-5 minutes).
  3. Add the sage leaves to the warm brown butter. Let them sizzle for about 30 seconds, just until they’re fragrant. Set the skillet aside.
  4. Place the seasoned turkey breast skin-side up in your roasting pan. Drizzle the olive oil over the skin and rub it in. Brush about half of the brown butter mixture all over the turkey, including the sage leaves. Arrange a few of the sage leaves right on top of the skin.
  5. Roast the turkey for 50-60 minutes, basting with the remaining brown butter every 20 minutes. The turkey is done when an instant-read thermometer inserted into the thickest part of the breast reads 155°F (68°C).
  6. Remove the turkey from the oven and tent loosely with foil. Let it rest for 15-20 minutes. The temperature will climb to a safe 165°F (74°C).
  7. While the turkey rests, make the pan sauce (if desired). Place the roasting pan on the stovetop over medium heat. Add the chicken broth and scrape up any browned bits from the bottom of the pan. Whisk in the flour and let it simmer for 2-3 minutes until thickened. Stir in the lemon juice, then season with salt and pepper to taste.
  8. Slice the turkey against the grain. Arrange on a platter, drizzle with the pan sauce, and garnish with the crispy sage leaves from the top. Serve immediately.

Notes

Browning butter requires attention; remove from heat as soon as brown specks appear to avoid burning. Resting the turkey is essential for juicy meat. Pat the skin dry for crispy skin. Use a thermometer for perfect doneness. Baste every 20 minutes but don’t open the oven too often.
