A quick and easy weeknight dinner featuring juicy pork chops with a golden crust and a rich garlic butter sauce, all made in one skillet in under 30 minutes.

  • 4 pork chops, bone-in or boneless (about 1 to 1.5 inches thick)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked or sweet paprika
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter
  • 4 to 5 garlic cloves, minced
  • 2 to 3 fresh thyme sprigs (optional)
  • 1/4 cup chicken broth or dry white wine
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Remove pork chops from refrigerator 20 minutes before cooking. Pat dry with paper towels.
  2. In a small bowl, mix salt, black pepper, garlic powder, and paprika. Sprinkle evenly over both sides of pork chops and press lightly.
  3. Heat a cast iron skillet over medium-high heat with olive oil until shimmering and just starting to smoke (about 2-3 minutes).
  4. Sear pork chops in the hot skillet without crowding. Cook undisturbed for 4-5 minutes on the first side until deep golden brown. Flip and sear second side for 3-4 minutes.
  5. Check internal temperature with a meat thermometer; aim for 135°F to 140°F at this stage. If needed, reduce heat to medium and cook another minute or two per side.
  6. Transfer seared pork chops to a cutting board and tent loosely with foil. Let rest.
  7. Reduce heat to medium-low. Add butter to the same skillet. Once melted, add minced garlic and thyme sprigs. Stir constantly for about 30 seconds until fragrant.
  8. Pour in chicken broth (or wine) and scrape up browned bits from the pan. Let simmer for 1-2 minutes until slightly thickened.
  9. Return pork chops and any accumulated juices to the skillet. Spoon garlic butter sauce over the tops. Warm through for about 1 minute.
  10. Garnish with fresh parsley and serve immediately with extra sauce spooned over each chop.

Notes

For best results, dry brine the pork chops by seasoning and letting them sit uncovered in the fridge for 1-2 hours. Use a meat thermometer to avoid overcooking. If the garlic starts to brown too quickly, remove the pan from heat immediately.
