Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and onion powder. Let them sit at room temperature for about 10 minutes.
  2. Heat a large skillet over medium-high heat and add the olive oil. Once shimmering, place the chicken in a single layer (work in batches if needed). Cook undisturbed for 5-6 minutes until golden, then flip and cook for another 4-5 minutes until internal temperature reaches 160°F. Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add minced garlic and sun-dried tomatoes to the pan. Stir constantly for about 30 seconds until fragrant.
  4. Pour in the chicken broth and scrape up browned bits from the pan. Let simmer for about 1 minute until slightly reduced.
  5. Pour in the heavy cream, then add Italian seasoning and red pepper flakes (if using). Stir and bring to a gentle simmer. Do not let it boil hard.
  6. Sprinkle in the grated Parmesan and stir until melted and the sauce thickens. Taste and adjust salt and pepper.
