A quick and easy holiday cocktail made with a homemade cranberry-rosemary syrup and prosecco. It’s tart, bubbly, and festive, perfect for impressing guests without any stress.

Ingredients

Scale
  • 1 cup fresh or frozen cranberries (about 100g)
  • 1/2 cup granulated sugar (100g)
  • 1/2 cup water (120ml)
  • 2–3 sprigs fresh rosemary
  • 1 bottle prosecco (750ml), chilled
  • Ice cubes
  • Optional garnishes: fresh rosemary sprigs, fresh cranberries, or a twist of orange peel

Instructions

  1. Make the cranberry rosemary syrup: In a small saucepan, combine 1 cup cranberries, 1/2 cup sugar, and 1/2 cup water. Add 2-3 sprigs of fresh rosemary. Stir together.
  2. Bring to a simmer: Place the saucepan over medium-high heat and bring the mixture to a gentle boil. The cranberries will start to pop, about 3-4 minutes. Reduce heat quickly.
  3. Simmer and smash: Reduce heat to low and let simmer gently for 8-10 minutes until cranberries are soft and bursting. Smash any remaining whole cranberries with the back of a wooden spoon.
  4. Strain the syrup: Place a fine-mesh strainer over a heatproof bowl or storage bottle. Pour the hot mixture through the strainer, pressing on solids to extract liquid. Discard pulp and rosemary. You should have about 3/4 cup syrup.
  5. Cool the syrup: Let the syrup cool completely at room temperature, about 15-20 minutes. (Refrigerate to speed up, but do not add warm syrup to prosecco.)
  6. Chill everything: Ensure prosecco is well-chilled. Syrup should be at room temperature or slightly cool. Syrup can be made up to a week ahead and refrigerated; bring to room temperature before using.
  7. Assemble the cocktail: Fill a champagne flute or wine glass halfway with ice. Pour in 1-2 tablespoons of syrup. Slowly top with chilled prosecco, pouring gently to preserve bubbles. Stir gently.
  8. Garnish and serve: Add a fresh rosemary sprig and a few fresh cranberries to each glass. Serve immediately.

Notes

Do not add warm syrup to prosecco or it will kill the bubbles. For a non-alcoholic version, swap prosecco for sparkling water or non-alcoholic sparkling wine. For a stronger drink, add a shot of vodka or gin per glass. Syrup can be stored in the refrigerator for up to two weeks or frozen for up to three months.
