These cranberry bliss bar blondies take everything you love about those fancy coffee shop cranberry bliss bars but pack it into a chewy, buttery blondie that’s way easier to make. The tartness of dried cranberries cuts through the sweet white chocolate, and that drizzle on top takes about thirty seconds but makes the whole thing look like you spent hours on it.

Ingredients

  • Unsalted butter, ½ cup (113g)
  • Light brown sugar, 1 cup (200g), packed
  • Granulated sugar, ¼ cup (50g)
  • Large egg, 1, room temperature
  • Large egg yolk, 1
  • Vanilla extract, 1½ teaspoons
  • All-purpose flour, 1½ cups (180g)
  • Salt, ½ teaspoon
  • Baking powder, ½ teaspoon
  • Dried cranberries, ¾ cup (105g)
  • White chocolate chips, ½ cup (85g)
  • White chocolate chips, ⅓ cup (55g) (for drizzle)
  • Coconut oil or vegetable oil, 1 teaspoon (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Lightly grease the exposed sides of the pan with a tiny bit of butter or nonstick spray.
  2. Brown the butter: Place the ½ cup of unsalted butter in a small saucepan over medium heat. Stir occasionally until the butter melts, foams, and turns a light amber color with a nutty aroma (about 4-5 minutes). Remove from heat immediately and pour into a medium mixing bowl. Let cool for 5 minutes.
  3. Combine sugars and butter: Add the packed brown sugar and granulated sugar to the cooled browned butter. Whisk until the mixture looks like wet sand and is smooth (about 1 minute).
  4. Add the eggs and vanilla: Crack the whole egg and extra egg yolk into the bowl. Add the vanilla extract. Whisk vigorously for about 30 seconds until the batter is thick, glossy, and pale in color.
  5. Mix the dry ingredients: In a separate small bowl, whisk together the flour, salt, and baking powder. Add the dry ingredients to the wet mixture in two additions, folding gently with a rubber spatula after each addition. Mix just until no white streaks remain.
  6. Fold in the add-ins: Add the dried cranberries and ½ cup white chocolate chips to the batter. Fold with about 8-10 strokes until evenly distributed.
  7. Transfer to the pan: Scrape the batter into the prepared baking pan. Spread evenly into all corners using a spatula. The top doesn’t need to be perfectly smooth.
  8. Bake: Place the pan on the center rack and bake for 22-26 minutes. The edges should be golden brown and pulling away from the parchment. The center should be set but still soft. A toothpick inserted into the center should come out with a few moist crumbs attached.
  9. Cool completely: Place the pan on a cooling rack and let cool for at least 1 hour.
  10. Make the white chocolate drizzle: Once blondies are completely cool, combine ⅓ cup white chocolate chips and 1 teaspoon coconut oil in a small microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth (about 40-60 seconds total).
  11. Drizzle and set: Use a fork or small whisk to drizzle the melted white chocolate over the cooled blondies in a back-and-forth motion. Let set at room temperature for about 20 minutes, or refrigerate for 10 minutes.
  12. Slice and serve: Lift the blondies out of the pan using the parchment paper overhangs. Place on a cutting board and slice into 16 squares (4 rows by 4 rows). Wipe the knife clean between cuts for cleaner slices. Serve at room temperature.

Notes

Don’t skip browning the butter—it adds a nutty, toasty flavor. Room temperature eggs are important to prevent the batter from seizing. Check for doneness early (at 22 minutes) to avoid overbaking. Let blondies cool completely before drizzling to prevent the drizzle from melting into a puddle. Use a light hand with the drizzle for a more visually appealing look.
