A quick and easy one-pot lasagna soup that delivers all the comfort of classic lasagna in under 30 minutes. Rich tomato broth, Italian sausage, and creamy ricotta make this a cozy weeknight favorite.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage (or ground beef)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • 6 cups low-sodium chicken broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14.5 ounces) diced tomatoes
  • 8 ounces mafalda pasta (or broken lasagna noodles)
  • Salt and black pepper, to taste
  • 1 cup whole milk ricotta cheese
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons fresh parsley or basil, chopped
  • 1 cup shredded mozzarella cheese (for garnish, optional)

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add the Italian sausage and cook, breaking it up, until browned and cooked through, about 5-6 minutes. Leave about a tablespoon of fat in the pot.
  2. Reduce heat to medium. Add the diced onion and cook for 3-4 minutes until soft and translucent. Add the minced garlic, dried oregano, and red pepper flakes (if using). Cook for 30 seconds until fragrant.
  3. Pour in the crushed tomatoes, diced tomatoes (with juices), and chicken broth. Stir, scraping up any browned bits from the bottom. Bring to a boil, then reduce to a simmer.
  4. Add the mafalda pasta or broken lasagna noodles to the simmering soup. Stir to submerge. Cook according to package directions (about 8-10 minutes for al dente), stirring occasionally. Do not overcook.
  5. While the pasta cooks, make the ricotta topping: In a small bowl, combine ricotta, Parmesan, nutmeg, and a pinch of salt and pepper. Stir until smooth.
  6. Taste the soup and adjust salt and pepper as needed.
  7. Ladle the hot soup into bowls. Add a generous dollop of the ricotta mixture to the center of each bowl. Sprinkle with shredded mozzarella (if using) and fresh parsley or basil. Serve immediately.

Notes

For best results, dollop ricotta on top of each serving rather than stirring into the pot. Add a pinch of nutmeg to the ricotta for extra flavor. If making ahead, cook pasta separately and add to individual bowls to prevent mushiness. Freeze soup base without pasta for up to 3 months.
