Ingredients

Scale
  • 10–12 large sprigs fresh rosemary
  • 1 cup small round crackers or crostini
  • 1 wheel brie (8 oz)
  • 4 oz sharp cheddar, cubed
  • 4 oz gouda, cubed
  • 4 oz blue cheese, crumbled (optional)
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami, thinly sliced
  • 4 oz soppressata, thinly sliced
  • 1/2 cup black olives (such as Kalamata)
  • 1/2 cup green olives, stuffed with pimento
  • 1/2 cup dried cranberries
  • 1/2 cup roasted, salted almonds
  • 1/4 cup fresh pomegranate seeds
  • Fresh figs, quartered (optional)
  • Honey, for drizzling

Instructions

  1. Prepare Your Board: Start with your clean, dry board. If you’re worried about the board getting stained, you can line it with a piece of cheesecloth or a large grape leaf, but I usually just go straight on the wood.
  2. Create the Rosemary Ring: Take your fresh rosemary sprigs and arrange them in a large circle on the outer edge of the board. Overlap the stems slightly so it looks like a continuous ring of greenery. This is the ‘wreath’ part. Don’t be shy—use a lot of rosemary. It should look lush.
  3. Place the Crackers: Inside the rosemary ring, create a ring of crackers. Arrange them in a single layer, slightly overlapping, forming a second ring. This gives you a crunchy base to build upon.
  4. Add the Cheeses: Place the wheel of brie at the top (12 o’clock) of the board. It acts as a beautiful focal point. Arrange the cubes of cheddar and gouda in small clusters around the circle, alternating them. If using blue cheese, crumble it in a small pile. This creates visual interest.
  5. Add the Meats: Fold your slices of prosciutto, salami, and soppressata into loose ribbons or small piles. Place them in between the cheese clusters. Don’t lay them flat—the folds add volume and texture.
  6. Fill in the Gaps: Now, fill in the empty spaces with your accompaniments. Place the small bowls of honey, olives, and pomegranate seeds at strategic points around the circle. Scatter the dried cranberries and almonds in the remaining gaps. Tuck a few fresh fig quarters in if you have them.
  7. The Final Touch: Drizzle a little honey over the brie and the blue cheese. Take a step back and look at your board. Does it look balanced? Are there any bare spots? Fill them in with a few extra almonds or cranberries. The goal is a board that looks abundant and full, like a wreath made of food.
  8. Serve Immediately: This board is best served at room temperature. If you’ve prepped everything, it should be ready to go as soon as your guests arrive.

Notes

Prep all ingredients the night before and store separately in the fridge. Assemble the board no more than 1-2 hours before serving. Take cheeses out of the fridge 30 minutes before serving for best flavor. Don’t overcrowd the board; give each element breathing room. Ensure rosemary is fresh and dry to prevent soggy crackers.
