Ingredients

Scale
  • 1 boneless, skin-on turkey breast (about 2 to 3 pounds, or 900g to 1.4kg)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (2g)
  • 1/2 teaspoon garlic powder (2g)
  • 1/2 teaspoon dried thyme (1g)
  • 1/2 cup whole berry cranberry sauce (120ml)
  • 1/4 cup orange juice (60ml)
  • 2 tablespoons brown sugar (25g)
  • 1 tablespoon orange zest (from about 1 large orange)
  • 1 tablespoon butter (14g), unsalted, melted
  • 1/2 teaspoon ground cinnamon (1g), optional

Instructions

  1. Preheat your oven to 375°F (190°C). While it’s heating, take the turkey breast out of the fridge and let it sit on the counter for about 20 minutes. Pat it dry with paper towels.
  2. In a small bowl, mix together the salt, pepper, garlic powder, and dried thyme. Rub the turkey breast all over with the olive oil, then sprinkle the dry rub evenly over the entire surface, including the underside.
  3. In a small saucepan over medium heat, combine the cranberry sauce, orange juice, brown sugar, orange zest, melted butter, and cinnamon if using. Stir until the cranberry sauce has melted and the mixture is smooth. Let it simmer for 2-3 minutes, until it thickens slightly. Remove from heat and set aside about 1/4 cup (60ml) for basting later.
  4. Place the turkey breast skin-side up in your roasting pan or baking dish. Roast it uncovered for 30 minutes.
  5. After 30 minutes, remove the pan from the oven and brush a generous layer of the glaze (the larger portion) all over the turkey. Return it to the oven.
  6. Roast for another 20 minutes, then brush on another layer of glaze. Repeat this process every 15-20 minutes until the turkey is cooked through and the glaze is sticky and caramelized. The total roasting time will be about 50 minutes to 1 hour 15 minutes, depending on the size of your breast. The internal temperature should reach 165°F (74°C) when measured at the thickest part of the breast.
  7. Once the turkey hits 165°F (74°C), remove it from the oven. Transfer it to a cutting board and tent it loosely with aluminum foil. Let it rest for at least 10 minutes.
  8. While it rests, warm up the reserved glaze. Slice the turkey against the grain into thick, juicy pieces. Drizzle with the warmed glaze and serve immediately.

Notes

Don’t skip the rest—it allows the juices to redistribute. Use a thermometer to avoid overcooking. Glaze in stages for a caramelized crust. If the skin browns too quickly, tent with foil. Thaw turkey completely before cooking.
