  • 1 cup all-purpose flour
  • 1/2 cup dark brown sugar, packed
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup whole milk
  • Vanilla ice cream or whipped cream (for serving, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Butter a 9×13-inch baking dish or cast iron skillet.
  2. In a large bowl, combine sliced peaches, 1/2 cup dark brown sugar, bourbon, lemon juice, vanilla extract, cornstarch, cinnamon, and nutmeg. Gently toss to coat. Let sit for 5-10 minutes.
  3. In a medium bowl, whisk together flour, 1/2 cup dark brown sugar, baking powder, and salt. Pour in melted butter and milk, stirring just until combined (a few lumps are fine).
  4. Pour the peach mixture into the prepared dish. Drop spoonfuls of topping batter over the peaches, leaving some gaps.
  5. Place dish on a baking sheet and bake for 35-40 minutes, until topping is golden brown and filling is bubbly and thick. Tent with foil if browning too quickly.
  6. Let cool for 10-15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

If peaches are very ripe or using frozen peaches (thawed and drained), add an extra tablespoon of cornstarch. Let cobbler rest after baking to allow filling to set. For a bourbon-free version, substitute with 2 tablespoons apple cider and 1 tablespoon vanilla extract.
