These air fryer pork chops are tender in the middle with a gorgeous golden crust, thanks to the air fryer’s hot circulating air. The herb butter melts into every crevice, infusing the meat with garlic, rosemary, and thyme for a comforting, quick weeknight dinner.

Ingredients

Scale
  • 4 tablespoons (56 g) unsalted butter, softened
  • 3 cloves fresh garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 2 bone-in pork chops, thick-cut (about 1 inch thick, 8 oz or 225 g each)
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika

Instructions

  1. Take the pork chops out of the fridge 20 minutes before cooking to bring them to room temperature. Pat them dry with paper towels.
  2. Make the herb butter: In a small bowl, combine softened butter, minced garlic, chopped rosemary, thyme, parsley, ½ teaspoon salt, and ¼ teaspoon pepper. Mix with a fork until well combined and set aside.
  3. Season the pork chops: In a separate small bowl, mix 1 teaspoon salt, ½ teaspoon pepper, ½ teaspoon garlic powder, and ½ teaspoon paprika. Sprinkle evenly over both sides of the pork chops. Drizzle olive oil over the chops and rub it in with your hands.
  4. Preheat your air fryer to 400°F (200°C) for 3 minutes.
  5. Spread about half the herb butter mixture over the top and sides of each pork chop. Reserve the remaining butter for serving.
  6. Place the pork chops in the air fryer basket in a single layer with space between them. Cook in batches if necessary.
  7. Cook at 400°F (200°C) for 10 minutes. At the 5-minute mark, flip the chops using tongs.
  8. Check the internal temperature with a meat thermometer inserted into the thickest part (avoiding bone). It should read 145°F (63°C). If not, cook for 1-2 more minutes and check again.
  9. Transfer the chops to a cutting board or plate and let them rest for 5 minutes. Meanwhile, warm the remaining herb butter in the microwave for 10 seconds.
  10. Spoon the reserved herb butter over the top of the chops right before serving.

Notes

Don’t skip the resting time—5 minutes makes the difference between dry and juicy. Use a meat thermometer every time to avoid overcooking. Let butter soften naturally for best texture. Do not overcrowd the air fryer basket. Pat pork chops dry before seasoning for a better crust. If using thinner chops (less than 1 inch), reduce cooking time to 7-8 minutes.
